ZUCCHINI & STUFFING CASSEROLE

| INGREDIENTS
|
2 Zucchini.
1 small or 1/2 large onion.
2 carrots.
2 celery stalks.
|
1 Stove Top stuffing, cornbread, 6 oz.
2 eggs.
1 tablespoon butter or margarine.
1/2 cup grated cheddar cheese.

| INSTRUCTIONS
|
Shred Zucchini on large holes of grater.
Shred carrots on large holes of grater.
Dice onion very fine.
Break eggs into a bowl and whisk thoroughly.
Place STOVE TOP stuffing cornbread in a bowl.
Add contents of seasoning packet to 1 3/4 cups hot water and butter or margarine, stir and mix
with the cornbread.
Assemble as follows:
:: Combine all ingredients together in a bowl and mix well.
:: Place all ingredients into a 2 quart baking dish coated with cooking spray.
Place in a pre-heated 350 degree oven.
Bake for 45 minutes.
25 minutes before the casserole is done, spread 1/2 cup cheddar cheese on top and continue
baking until done.
