2 small or 1 large Zucchini.
1/2 pound bacon.
1/2 - 3/4 cup grated cheddar cheese.
1/2 cup milk.
4 eggs.

1/2 cup sour cream.
3 - 4 Tablespoons "Bisquick".
Pepper and salt to taste.
1/2 teaspoon onion powder
Savor salt to taste (optional).
| INSTRUCTIONS

Cut Zucchini into 1/4 - 3/8 inch rounds and blanch for 5 minutes in salted water.
Fry bacon until very crisp, then crumble - set aside.
Make a batter by combining:
:: "Bisquick".
:: Milk.
:: Eggs.
:: Sour cream.
:: Salt and pepper to taste.
:: Onion powder.
:: Savor salt to taste (optional).
Mix batter well.
Using a 1 or 2 quart baking dish coated with cooking spray, assemble as follows:
:: Layer the Zucchini in the bottom of the dish.
:: Layer 1/2 of the grated cheddar cheese on top of the Zucchini - spread evenly.
:: Layer the bacon on top of the cheddar cheese.
:: Pour the batter over the top and spread evenly.
:: Layer the remaining cheese evenly over the top of the batter.
Place in a pre-heated 350 degree oven.
Bake for 35 minutes.
As an option, pimientos or chopped green chillies may be placed on top of the batter before
baking.
